Health Update and Taco Casserole

Happy Friday everyone!! 

Here’s an update on my “health issues”.    The good news is that I don’t have asthmas, my blood pressure is normal, my thyroid is normal and my cholesterol level is 172!  It’s been decided that I must have been suffering from panic attacks (anxiety, stress – whatever you want to call it) so I was given a prescription for Xanax to be taken when needed, which luckily I haven’t had to take any yet!!!

I have no idea what kind of stress I could have been under to cause the scary symptoms I was experiencing.  My life has been the same as it’s always been – busy!!  I’ve always joked that I work best under pressure, but I guess as I’m getting older, my body has decided it doesn’t like working under those conditions!  lol  So with “happy pills” in hand, I’ll have to learn to approach life in a less stressful way.   (Yah, right!)

As each possible health risk was tested and marked off the “probable causes” list, I found my tension was easing and my symptoms were disappearing, so now I’m back to my usual self!  Yippee!!

Sometimes planning dinner can get a little hectic while trying to accommodate everyone’s busy schedules, so it’s nice to find recipes that are easy to make and that everyone likes.  I found this recipe in one of those cook booklets you see in the checkout line.  It’s from Pillsbury and titled “Crescents, Biscuits & More”.  It’s becoming a family favorite.

Golden Layers Biscuit Taco Casserole

1 jar (16 oz.) taco sauce

1 can (12 oz.) Pillsbury Golden Layers refrigerated    buttermilk or original flaky biscuits

1 c. shredded sharp Cheddar cheese

1 c. shredded mozzarella cheese

1 can (2 1/4 oz.) sliced, ripe olives, drained

1 lb. lean ground beef

1/4 c. chopped red bell pepper

1/4 c. chopped green bell pepper

1 can (4 oz.) mushroom pieces and stem, drained (optional)

Heat oven to 400 degrees.  Lightly spray  13x9 pan with cooking spray.  Spread taco sauce evenly in bottom of baking dish.

Separate dough into 10 biscuits.  Cut each into quarters.  Place biscuit pieces in taco sauce.  Sprinkle 1/2 c. cheddar cheese, 1/2 c. mozzarella cheese and the olives over top; stir gently to mix.

Bake 15 to 18 minutes or until bubbly.   Meanwhile, in medium skillet, combine beef, bell pepper and mushrooms; cook over medium-high heat until beef is thoroughly cooked, stirring frequently.  Drain.

Remove baking dish from oven.  Sprinkle remaining 1/2 c. cheddar cheese and 1/2 c. mozzarella cheese over mixture.  Top evenly with ground beef mixture.

Return to oven; bake an additional 5 to 7 minutes.

May be topped with shredded lettuce, chopped tomato, sour cream and/or chopped avocado.

  1. Wonderful new Kris. I'm glad you have nothing seriously wrong with you although panic attacks can be really horrible if you are the one experiencing them. I'll keep you in my prayers.

    Your recipe sounds delicious. My family loves tacos and taco salad so I'm sure they wouldn't mind trying this some night.

Hi Kris!....It's so good to hear that you're feeling better and back to your usual self!....just wondering if something's wrong is very stressful!....I too recently had blood work to rule out a couple of possible problems....I don't know how old you are but I am 51 and probably in menopause (I think it's bizarre that there's no sure way to tell when it starts and stops) because the hot flashes and night sweats are occuring but even worse that those, yikes! are the mood swings!....my husband says he doesn't notice me being any different but I sure feel different!....I'll be glad when this mess is over that's for sure!....I am wondering if what you were experiencing could have been hormone related!

  3. Like I said before, knowing is half the battle. Went through the same thing myself years ago. The doctor looked at me after a battery of tests and said, "Cathi, you have 4 kids at home and a full-time job. What do you think is wrong with you? Duh". Couldn't give up the job or the kids but Dear Hubby and the kids did what they could to make life a little more stressful for me. As long as YOU feel better about it, that's all that counts.

  6. So happy to hear that you are feeling better. My Dad deals with panic attacks and is on the same meds...the meds really make him mellow and really help calm him down. Anyway, take care of yourself. Stay Warm!!

  10. Kris, (((HUGS))) 15 years ago I was having panic attacks where I thought I was having a heart attacks and rushed to the hospital on several occassions.. It was between christmas and New Years one time...the hospital prescribed xanax...Yes they are happy pills...Yes they made me feel good...BUT I had to see my regular doctor and he was so upset they put me on Xanax because xanax is very very addicting....Please be careful with that...My doctor taught me how to breath with the panic attacks...When I conquered the breathing exercising I soon had less and less of them and now I don't have them... I am glad you are doing better...

    I'm glad to hear you're feeling better. Ray used to suffer from terrible anxiety attacks. He used to have dizziness so bad he thought he was going to pass out while driving. They seem to have come under control when he started walking on the treadmill for stress relief. Stress can do such terrible things to the body. I hope you never have to use the meds.
    Thanks for the info about the ice cream. I found a recipe for homemade if you're interested. Most of the recipies called for raw egg yolks but I'm not a fan of using them. This recipe doesn't call for them. I even have a recipe for eggless Egg Nog! Let me tell you that you don't even miss the eggs! Everyone goes crazy for it at Christmas. Yum.   17. Kris, I'm glad for the update that "stress" may be your only problem! Glad it's not something major. I've had some stress issues over the last 10 years and have started to conquer them. It's tough to let things go, but that really is the best solution. I've actually learned to say "NO", mean it and not feel guilty - please try it. I've said no to meetings at church, volunteer opportunities at school, etc. It gets easier. Have a wonderful weekend. ~Ann

  19. Oh yummo! That sounds great! But mostly I am relieved to hear your health scare wasn't anything serious. I have several friends recently diagnosed with panic attacks as well. I am glad you have the pills if you need them! Take care of you!
